Honey Ginger Lemonade

We've concocted a simple refreshing drink by adding a twist to a summer fave- lemonade.  Serve over ice with a fresh sprig of thyme and you've got the perfect anecdote to those hot summer days!


1/3 cup Catskill Provisions raw wildflower honey

3 oz. fresh ginger, unpeeled

1 cup freshly squeezed lemon juice

3 cups water

fresh sprig of thyme

1. Slice ginger into thin pieces, leaving unpeeled.  In a small saucepan, bring the honey, ginger, water and 2 sprigs of thyme to a boil. 

2. Remove from heat and cover.  Steep for 30 minutes to one hour.

3. Strain ginger and thyme pieces out of syrup, then mix the liquid with fresh lemon juice in a pitcher.  Chill.

4. Fill tall glass with ice, add fresh lemon slices and stir.  Garnish with a fresh sprig of thyme, serve and enjoy!
